The easiest meal in the world! – Adobo Filipino Style

So being that yesturday was Monday and I usually come home in a half coma, and being that I am STILL moving into boyfriends 1000 square foot apartment from my 2800 square foot house and the kitchen is a disaster, I decided I needed to make an easy throw together meal. Bring on the Adobo! Now this is no Mexican Adobo that most people are used to seeing (or eating) nope this Adobo is a Filipino recipe my Sister in Law gave me that is equally ROCKIN and EASY to make.

Here goes:

You will need the following for BASIC Adobo:

Chicken legs (and they are CHEAP too!)

Soy sauce (I don’t believe in cheap soy sauce so I always get the good stuff, low sodium of course.)

Vinegar (I use a spicy filipino style vinegar but you can use regular old white vinegar)

Garlic (the more the better)

Rosemary (which I didn’t have so its not vital but still nice to have)

Pepper

Red pepper flakes (if you like)

Mix equal parts of soy and vinegar throw in the other ingredients. DON’T ADD CHICKEN YET! You need to taste it till it taste good to you. After it taste yum for your taste buds add the chicken and sauce to a Wok or other cooking contraption that has a lid. Let it SIT for at least 30 minutes so the chicken can get aquatinted with the sauce. They need to be friends if they are going to create something good. You dig?

Now that the chicken and the sauce are all chummy you can put it on the burner on med/high until it starts to boil, then down to a simmer. Cover it up (hey they need their privacy to make things happen, OK). Cook it up for 20 minutes then turn the meat and cover and cook for another 20 minutes or until the meat is falling off the bone). Now while this whole mess is cooking I will also take out the good ol’ rice cooker and make some rice to go along with the whole thing… That takes about 20 minutes so if you have a rice cooker don’t start the rice until you have turned the meat.

Now everyone serves (not to mention makes) this dish the way they prefer. My Sister-In-Law serves the whole leg over rice with some sauce. I prefer to break it all down and put it in the bowl all ready to eat. I don’t like to work for my food once I start. (with the exception of hot wings). Anywhoo this is what it will look like if you make it the way I make it:

Yeah it looks simple but man is it good! This is one of those dishes that can be played with. My old roommate, Nosh, adds ginger, sometimes I add broccoli. Its really up to you. Try it out. Its good. You’ll like it.

By the way there are more complicated versions of this recipe where the meat is prepared differently or the sauce is slightly different. Like I said its one of those recipes you make your own. Enjoy it. Create with it. Use the sauce to marinate steak. Its the bomb. Go…
